    Steak with ‘Blue Cheese Sauce’

    I love steak. Charred on the outside and purple on the inside – perfect. Hear I’ve cheated on a sauce and simply slice some creamy blue cheese on top of the steak. It’s really good! I use Blue Mondays cheese. It’s available in Sainsbury’s and EN2 Meat stock other Alex James cheeses so they may have it in from time-to-time. I bought the steaks for this recipes from Botany Bay Farm Shop, they are sirloins but cooking fillets and rib-eyes will go just as well.

    Cooking Steak and Timings

    I’ve tried cooking steaks in many ways but I’ve settled on a method that gives me consistent results. You’ll always need to use your own judgement on cooking times as steaks are different thicknesses and will cook in slightly different times. A couple of tips – use good quality steaks. This doesn’t mean expensive but try and find a steak with good marbling. Also, cook the steak from room temperature, not straight from the fridge. This will mean that the middle of the steak cooks through and is not cold. When it’s cooked, let it rest for 5 mins and serve on a hot plate.

    For a blue steak, heat a pan to a medium-high heat and sprinkle to steak with salt on both sides. Start a stopwatch and place the seasoned steak in the pan and let it sear for 30 seconds and then flip it over. Then flip the steak every 10 seconds for 1:30 mins.

    If you want your steak cooked to rare simply increase the flipping time to 2 mins, medium-rare – 3mins, medium – 4mins, medium-well – 5mins, well done – 6 mins.

    Cooking time: 30 mins

    Ingredients

    • 2 sirloin steaks – Botany Bay Farm Shop
    • 4 slices of Blue Monday’s cheese
    • Butter, a knob or two

    Method

    Cook the steaks to your liking as described above, when you rest them put the sliced cheese on top to melt it slightly

    A minute before serving put the steaks in the oven just to melt the cheese and make sure they are warm.
