This dish reminds me of sitting in the sun in Barcelona, drinking white wine and enjoying lovely tapas. I grew up thinking sardines only came in a can covered in a tomato sauce, bless the 80s! Fresh sardines are oily and rich in flavour. To do this snack justice take the effort to get fresh sardines and some proper bread. I go to Green Lane Fisheries and Holtwhites – if you live in Enfield make the effort to go, you won’t be disappointed.

Ingredients
- 6 Sardine fillets – Green Lanes Fisheries
- 2 slices of sourdough bread – Holtwhites Bakery
- ½ lemon
- Handful chopped parsley
- 6 cherry tomatoes
- 2 cloves garlic
Method
Heat a small amount of oil in a frying pan over a medium high heat. Salt the sardines and lay then, skin side down, in the pan. They’ll only take 3 minutes to cook. While the sardines are cooking toast the bread. When the toast is ready chop the garlic gloves in half and rub the newly exposed surface on the bread. Next chop the tomatoes in half and squeeze the seeds and juice out on to the bread, discard the skins.
After 3 minutes of cooking turn the sardines over. Add the chopped parsley and the juice of the lemon, cook for 30 seconds. Place the sardines on top of the bread and enjoy.
